How to Brew the Perfect Cup of Tea: Temperature, Time and Technique

You bought a quality tea, but it tastes bitter, weak, or like nothing at all. Before blaming the tea, check this: 90% of the time, the problem is how it's brewed. Here's how to get it right.

1. Water temperature

Boiling water (100°C / 212°F) scorches delicate teas — green, oolong, herbs — and makes them bitter. Let it cool slightly off the boil for green tea.

2. Steeping time

"Longer is better" is a myth. Over-steeping pulls out bitter tannins. Aim for 5 to 7 minutes for herbal infusions; less for green tea.

3. The right amount of leaf

Weak tea isn't fixed by steeping longer (that just makes it bitter). Use the right dose: about 2 g (one teaspoon) per 250 ml of water.

4. Skip the sugar

Sugar masks a tea's nuances — and its benefits. A good natural tea doesn't need it. If yours does, it may be low quality.

5. Cover while steeping

Covering the cup keeps the aromatic oils in. Uncovered, the aroma escapes.

6. Store it well

Light, moisture and strong odors ruin tea. Keep it in an airtight container, away from spices.
